Trend Alert—Healthy ‘Unicorn’ Food

Of all the recent food trends, unicorn food has got to be the most intriguing. You might have seen some pretty cool #unicornfood pics popping up in your Instagram feed lately. At first look, it may seem like candy, but if you want to taste the rainbow, this is probably the healthiest way to do it (sorry, Skittles). Deriving the colors from nature, unicorn food comes jam packed with the trendiest of superfoods.

  • Yellow=Turmeric
  • Blue=Spirulina Powder
  • Green=Chlorophyll Drops
  • Red/Pink=Beet Powder/ Freeze Dried Strawberries
  • Purple=Blueberry Powder

This all started with a smurf latte: a combination of blue algae, lemon, ginger, and coconut milk. Not a drop of coffee in this latte, but hey, food trends don’t always make sense. The whole thing is a little too hipster for me, and I totally prefer my lattes with coffee (I’m a rebel), but I admit that I absolutely love the way it looks! Check it out!

Try This—Summer Fruit Guacamole

As if guacamole needed any more help being delicious, here’s a recipe that will totally knock your socks off! I usually mix in fresh corn into my guacamole, but last night I decided to skip the corn and just throw in some fresh berries! The result was amazing. I used four avocados and I am not ashamed to say that I ate more than half of the bowl. Barbecue season is officially here (in NYC at least…sorry, Aussie friends). But whatever the season, you can wow your friends and family with this summer fruit guacamole!

Summer Fruit Guacamole

Ingredients

  • 4 ripe avocados (2 pounds total)
  • 1 cup finely chopped white onion
  • fresh serrano chiles, finely chopped (seeds included)
  • fresh lime juice (I used a little less than 1/4 cup)
  • 1 cup fresh strawberries (Cut into quarters)
  • 1/2 cup chopped cilantr0
  • salt

Directions

  • Halve, pit, and peel avocados
  • Mash in a bowl (I use a fork because I like my guac on the chunky side)
  • Stir in onion, chiles,  lime juice, and salt
  • fold in the sliced strawberries
  • Season with salt and a few more squirts of lime juice

***I used strawberries because that’s what I had on hand, but be daring! Try this recipe with the fruit of your choice…mango, maybe?!!

Try This–Ramen Burger Recipe

I know I’m a little late when it comes to this particular food craze, but better late than never, eh?

These days, it takes about 30 minutes for a food to turn into a food craze. From there, it’s only a matter of hours before the recipe hack comes along, because no one has time to wait in line for the rest of their lives just to get a taste of pizza-hot-dog-crepes. So, when the ramen burger took Smorgasburg by storm, we sat back and waited for some intrepid chef to do their homework. Thankfully, Popsugar Food stepped in, making a step-by-step video of how to make the ramen burger at home.

Using simple kitchenware and basic ingredients, this recipe looks totally doable, and totally delicious. Watching host Brandi Milloy eat the final product had us glaring at our lunch salad with resentment. While there are a few tricky steps, it’s nothing too terribly complicated. If it takes you a few tries to get it right, then, oh well, guess you have to eat some fried-ramen leftovers. Life’s hard, huh?
