Peach and Plum Parfait Pops

Summertime grab ‘n go breakfast goals, yo! These popsicles are super convenient. Peaches are my fave and I’m absolutely crazy over yogurt. Give this recipe a try!

Ingredients
(makes about 10 pops)
For the Yogurt Mixture
  • 2 large peaches, pitted
  • 2 plums, pitted
  • ½ cup honey Greek yogurt
  • 2 tbsp sugar
  • ½ tsp cinnamon
For the Streusel
  • 4 Weetabix biscuits
  • 3 tbsp brown sugar
  • 2 tbsp melted butter
  • 1 tsp cinnamon
  • popsicle molds (I prefer these because I’m not a huge fan of plastic plus they’re super chic)
  • popsicle sticks (find them here)
Directions
  • Cut the peaches and plums into slices and place a blender. Add the Greek yogurt, sugar, and cinnamon and pulse until totally pureed. Set aside.
  • For the streusel, break up the Weetabix biscuits into a medium bowl. Stir in the brown sugar, cinnamon, and melted butter. Mix until totally combined.
  • Fill the popsicle molds halfway with the peach plum yogurt mixture. Add a layer of streusel, followed by a second layer of peach plum yogurt mix. Top off with streusel.
  • Add the popsicle sticks about ¾ of the way into the mold. Put in the freezer until frozen.

***I’m thinking about using Shredded Wheat Cereal instead of Weetabix. Has anyone else tried that?
